cancuncookies on bake at 350

Today my COOKIES were featured on Bridget's blog, Bake at 350...

Just imagine!
I'm following her blog since last year when I found her while googling "Lance Armstrong"... I read about her Mom, loved her photos as a little girl, and started reading her blog... I was a lurker but because I didn't know I could comment and thought it was a certain kind of club... as a COOKIE lover I just love her tutorials, and tips... her photos are sooo good, her COOKIES are amazing... and today I found out she is talking about... me!!!

Thank you, Bridget! You made me feel super special, and my girls are applauding Mama's COOKIES on a friendly blog, and looking at all your COOKIES and photos... they noticed your black background photos, and asked if you taught my how to do that!!

ahoy, captain!


A's birthday theme was Nautical, so ML, his mom ordered COOKIES on a stick or lollies... I had a really small sailboat cookie cutter, so I outlined it and enlarged the image to make a larger one... I also made the light house cookie cutter since I didn't have one... the COOKIES were bagged and tied with white/red curly ribbons, and I made a tag with the Lifesaver image...
ML also ordered 2 Tortas de Elote (Corn Cake - not bread), and after the party called and asked for one more, as her mother-in-law really liked it, and wanted to have some for lunch on Saturday...
Many times COOKIES on a stick break or pull off from the stick, so I always tie and glue bagged COOKIES to the stick, but this time, thanks to Cirri from Galletas y Pasteles Decorados , I baked them with the stick and not one COOKIE broke... She is always sharing and is a great teacher!
I made these COOKIES without the stick for catalog purposes, and I'm testing black background photos... I think colors look brighter and the images can be cut and modified for ads... Thank you Bridget from Bake at 350 for sharing your tips!

Personalized COOKIES are great favors, and I've made many for couples that have their event in the zone... for example, these COOKIES were for B's wedding... she wanted something elegant to give as favors to her guests...

These iced COOKIES were custom decorated using her wedding invitations' font... each COOKIE was monogrammed using white on white icing... B asked for white ribbon, and I designed the little card in white and green, her chosen colors... COOKIES were placed on each plate setting...

Piñón de Carne


My mother in law shared this recipe... it is from my husband's grandmother, born in Costa Rica. Some people have told me that this plantain "lasagna", is from Puerto Rico, and that they just name it Piñón... so, from Costa Rica or Puerto Rico, Piñón is ricoooo (good)!!

Mi suegra compartió conmigo esta receta... es de la abuela de mi esposo, que nació en Costa Rica. Algunas personas me han dicho que esta especie de lasaña de plátano macho es de Puerto Rico, en donde la llaman simplemente Piñón... sea de Costa Rica o de Puerto Rico, el Piñón es ricoooo!!!

hip to be square alfajores

I just finished these Alfajores... these COOKIES from South America, are often given as gifts for weddings, birthdays, or any ocassion...
This time I made them just for fun for my Friends... I usually make them using a round COOKIE cutter, but lately I've made them square and everybody likes them! I ordered acetate boxes so I can box them in sets of 4, 8 and 12, tie a ribbon and add a tag to each one, so clients can choose to have them boxed or in trays... they also can choose 1, 2 or 3 flavors...


About Alfajores:
  • They are basically a sandwich COOKIE
  • The dough is usually made of cornstarch (traditional), chocolate or nuts
  • Some fillings are dulce de leche (thick caramel), jam, peanut butter, chocolate, Nutella
  • They can be dipped or not, glazed or not, and garnished or not
  • Garnishings include ground coconut, nuts, toasted almonds
