wonder where i've been...

Wonder where I've been lately??? Well it's been a very busy week here at home...


I've been working on some reno on the girls's room. You know how girls love to have friends over and chat and listen to music and dance and talk about boys and Jonas Brothers, and girly stuff like lipstick and Seventeen Magazine and all that?... well, the Infantas in this house are always complaining about their room (they have a point here) and I am working on a project, learning as I go... don't know how this will end, or if we'll just all sit and cry, and maybe eat COOKIES, but I'm doing my best to beautify their room and be the BEST MOM EVER!


I've also been hanging out with much neglected friends cause I don't want to be left friendless in this world lol... I had breakfast with friends I made at my children daycare, in 1994, and today I have a birthday party with ALL my BFF's in Cancun that was postponed in November because the party girl was in Arizona waiting for her grandson's birth! I wonder is we should celebrate her next b-day, too...


I'm almost done with the next step of our COOKIE tuto, so hang in there for me a couple of days and you'll know all my rock and rolling secrets!...

Se preguntan en dónde he estado últimamente??? Ha sido una semana un tanto ajetreada aquí en casa...


He estado trabajando en unas renovaciones en la recámara de las niñas. Ustedes saben como a las niñas les gusta tener amigas y platicar y escuchar música y bailar y hablar sobre niños y los Jonas Brothers, y cosas de mujeres como lipstick y revistas y todo eso?... bueno, pues las Infantas de esta casa siempre se quejan de su recámara (y tienen razón), y estoy trabajando en un proyecto, aprendo al tiempo que lo ejecuto... no sé cómo va a terminar o si vamos a sentarnos a llorar, y tal vez a comer GALLETAS, pero estoy haciendo lo mejor que puedo para embellecer su cuarto y ser la MEJOR MAMA DEL MUNDO!


Tambien he salido un poco con amigas que tenía abandonadas porque no quiero quedarme sin amigos en este mundo jeje... Fui a desayunar con mis amigas del mini-kinder de mis hijos, en 1994, y hoy tengo una fiesta de cumpleaños con TODAS mis amigas super consentidas de Cancun, que se pospuso en Noviembre porque la festejada se había ido a Arizona a esperar el nacimiento de su nieto! Me pregunto si tal vez debemos celebrar su próximo cumple, tambien...


Casi está listo el siguiente paso de nuestro tuto de GALLETAS, así que aguanten unos días más y van a conocer todos mis secretos!...

This is my 100th Post!!

I started this blog back in 2009 as a way of showing my work to clients and COOKIE friends from around the world...

I knew blogging was fun, but I never thought it would be such a wonderful experience. Through my blog I've met beautiful people, from different countries with whom I share my love for COOKIES... many have become friends and we care about each other. I've met some of them in person in Mexico City, and the United States.

I don't think I was the first person living in Cancun who started icing sugar COOKIES, but I'm sure no one here was teaching how to do it. So I bought a couple of books, and searched the internet looking for decorators... I found Foro FM (Mexico) and Cake Central. One day on CC someone mentioned two blogs that changed my life.

These first blogs were Bridget's Bake at 350 and Laura's A Dozen Eggs. At first I didn't leave comments, but I couldn't resist and I became their follower! Now I read and follow many other blogs!

I found Bea Roque, El Rincón de Bea a friend who I consider my "almost twin" from Spain (we share the same name, year and month of birth, I'm older than her for only 3 days!), and Pam (CookieCrazie) whose work is for a Mission in the Ukraine.

What I like about blogs, is that the person who writes talks from his/her own experience, and puts a lot of time and love to share what he/she knows, or has to say about something. As my friend Sugarbelle tells me, this is about being yourself.

I acknowledge that effort by leaving a comment. I know it feels good when someone says something about your work, or just stops to say Hi!

I've joined Flickr, Facebook and Twitter... In this vast community I have many friends and I'm having the time of my life! I love to learn, share and have fun with the people I meet!

Este es mi Post 100!!

Cuando inicié este blog, en 2009, lo hice como una forma de mostrar mi trabajo a clientes y amigas GALLETERAS alrededor del mundo...

Sabía que tener un blog era divertido, pero jamás me imaginé que sería una experiencia tan maravillosa. A través de mi blog he conocido gente bellisima, algunos de distintos paises, con quienes comparto mi amor por las GALLETAS... muchos se han convertido en amigos y nos interesamos unos por otros. He conocido en persona a algunos de ellos, en la Ciudad de México y en los Estados Unidos.

No creo haber sido la primera persona en Cancún que empezó a decorar GALLETAS, pero estoy segura que nadie aquí enseñaba cómo hacerlo. Así que compré un par de libros y busqué en el internet decoradores de GALLETAS... y encontré Foro FM (Mexico) y Cake Central. Un día en CC alguien mencionó dos blogs que cambiaron mi vida.

Estos primeros blogs son el de Bridget Bake at 350 y el de Laura A Dozen Eggs. Al principio no dejaba comentarios, pero no pude resistirme y me convertí en su seguidora! Ahora leo y sigo muchos blogs! 

Encontré a Bea Roque, de El Rincón de Bea a quien considero mi "casi gemela" en España (nacimos el mismo año, el mismo mes y solo soy mayor que ella por tres días!), y a Pam (CookieCrazie) cuyo trabajo es para una misión en Ucrania.

Lo que me gusta de los blogs, es que quien lo escribe habla de su propia experiencia, y pone mucho tiempo y amor para compartir lo que sabe o tiene que decir acerca algo. Como dice mi amiga Sugarbelle se trata de ser tu mismo.

Yo agradezco ese esfuerzo dejando un comentario. Sé que se siente bien cuando alguien dice algo acerca de tu trabajo, o simplemente te deja un Hola!

Me uní a Flickr, Facebook y Twitter... Tengo muchos amigos en esta enorme comunidad, y me estoy divirtiendo de lo lindo! Me gusta aprender, compartir y pasarla bien con la gente que conozco!

My COOKIE Dough List:

1. Use fresh, good quality ingredients
2. Measure ingredients well
3. Beat on low speed using the paddle attachment of your mixer
4. Beat butter and sugar until light and fluffy
5. Be creative and use different flavors that combine with the flavor of Royal Icing (RI)
6. Do NOT over mix flour
7. Cover your mixer when adding dry ingredients helps keep the kitchen (and you) clean
8. Save time: Make ahead COOKIE Dough and freeze for future use
9. Store in plastic bag to prevent freeze burn
10. Roll dough into a rectangle before storing
11. Move dough from freezer to the refrigerator the night before you are going to use it
12. Eating raw COOKIE Dough is a guilty pleasure which I do NOT recommend

Mi Lista de Masa de GALLETAS:

1. Utilizar ingredientes frescos, de buena calidad
2. Medir bien los ingredientes
3. Batir a velocidad baja con el aditamento plano de la batidora
4. Batir la mantequilla con azúcar hasta que esté clara y esponjada
5. Ser creativa y usa distintos sabores que combinen con el sabor de la Glasa (RI)
6. No mezclar la harina de mas
7. Cubrir la batidora cuando agregas los ingredientes secos ayuda a que tu cocina (y tu) se mantengan limpios
8. Ahorrar tiempo: Preparar Masa de GALLETAS con anticipación para usarla en el futuro
9. Guárdar la masa en bolsa de plástico para evitar que se queme en el congelador
10. Estirar la masa en un rectángulo antes de guardarla
11. Cambiar la masa del congelador al refrigerador la noche antes de usarla
12. Comer Masa de GALLETAS cruda es un placer inconfesable que NO recomiendo

Seven Ingredients that make me happy!   ~   Siete ingredientes que me hacen feliz!

After trying different COOKIE Dough recipes, adding, changing, testing... I ended up with one that my family, friends and I like a lot. I've tested COOKIES from friends that use recipes completely different so  I think no recipe is better than other, but that everyone has a personal taste and like. Some like crunchy or soft, buttery, spicey... the best recipe is the one that best works for you, the one you love working with, and tastes and feels the way you like...

I like the No Fail Sugar COOKIE, from Cake Central a lot, it is one of the recipes that lead to mine... so let's begin with that one, I'll tell you some of the changes I made...

I use powdered sugar instead of sugar because, living in Cancun (hot summer weather all year long), I have to cream butter and sugar for a VERY short time or I end up with soupy sugared butter.

As much as I love vanilla, I prefer citrus flavored COOKIES, so I use oil based orange extract for COOKIES, and non oil for Royal Icing (RI). That cuts the sweet from the COOKIE and people seem to love that.

This is important, use a clean cloth to cover your mixer when adding dry ingredients, or you and your kitchen will end up covered with it!

So let's start with COOKIE Decorating by preparing our COOKIE Dough. This is the way I do it, I'd love to hear if you tried it or how you do it!

One more thing before we begin... I ALWAYS, ALWAYS prepare at least 6 batches of COOKIE Dough... Why so? Because it takes the same time to wash all the utensils if I make one batch or six. Why 6 batches? Well, sometimes I make 12, if I have a lot to bake... And I like number 6, it's like half a dozen or three times two, or... but you can make one, three, or as many batches as you wish!

No Fail Sugar COOKIES

Easy peasy! Now please make some dough because next we'll I rock and roll... no, we´ll roll, cut and bake COOKIE Dough!

Always use fresh eggs   ~   Usa siempre huevos frescos

Creamed and fluffy...   ~   Acremada y esponjadita...

Después de probar diferentes recetas de Masa de GALLETAS, de agregar, cambiar, probar... terminé con una que nos gusta a mi familia, amigos y a mi. He probado GALLETAS de amigas que usan recetas completamente distintas a la mía y me atrevo a decirles que no hay una receta que sea mejor que otra, sino que cada quien tiene sus propios gustos: suave o crujiente, con más o menos mantequilla, especias... la mejor receta es la que mejor te sirve a ti, con la que tu mejor trabajas, y la que mejor te sabe y sientes... 

Me gusta mucho la No Fail Sugar COOKIE de Cake Central y es una de las recetas que usé para llegar a la mía... así que empecemos con esa, les cuento algunos cambios que le hice...

Uso azúcar glass en lugar de azúcar porque viviendo en Cancun, y con un clima que es caliente y veraniego todo el año,  necesito acremar mantequilla con azúcar en muy poco tiempo si no quiero terminar con una sopa de mantequilla azucarada.

Me gusta mucho el extracto de Vainilla, pero para mis GALLETAS uso extracto oleoso de Naranja porque me  gusta el sabor cítrico y me parece que le baja un poco lo dulce a la GALLETA, para la Glasa (RI) uso uno que no es oleoso. Creo que a la gente le encanta!


Esto es importante, cubre tu batidora con una toalla limpia cuando agregues los ingredientes secos, así ni tu cocina ni tu terminan como ratón de panadería...

Así que empecemos con la Decoración de GALLETAS preparando nuestra Masa de GALLETAS. Yo la hago de la siguiente manera... Por favor pláticame si la hiciste o como la haces tú!

Una última cosa antes de comenzar... yo SIEMPRE, SIEMPRE  preparo al menos 6 tandas de Masa de GALLETAS... Por qué? Porque me lleva el mismo tiempo lavar todos los utensilios que uso para preparar una tanda, que para preparar 6. Por qué 6? Si tengo mucho que hornear preparo 12... pero me gusta el número 6, es media docena, tres veces dos o... en fin, pero tu puedes preparar una, tres, o las que quieras!

Do NOT over mix after adding flour   ~   No mezcles de más despues de agregar harina

Fácilisimo! Ahora por favor prepara tu masa porque vamos a estirar, cortar y hornear la Masa de GALLETAS...
