wellies and umbrellas for a cloudy day...

Wellies and Umbrellas ~ Wellies y Paraguas

Don't you love rainy days? The only time I don't is when I have to decorate COOKIES... As a child I loved to go out with my umbrella, and I made sure my children had raincoats and umbrellas to play and have fun...

Rain can be heavy in Cancun, sometimes... I wonder why we don't wear Wellies and Raincoats...

I designed my own... ~ Diseñé los mios...

1. I started with a Cupcake COOKIE Cutter, I love this one!

2. Outline the Umbrella and Wellies with Rose Pink; outline a White Cloud ~ Delínea el Paraguas y los Wellies con Rose Pink; delínea la Nube con Blanco.

3. Flood the Wellies and alternate flooding the Umbrella section to give dimension. Deja secar 1 hora

4. Flood the Cloud. Let dry until a thin crust forms and make it fluff by swirling with a toothpick. I was thinking this would work great for fuzzy animals!

5. Flood the remaining Umbrella section. Deja secar 2 horas

coloring royal icing... color your cookies!

Coloring Royal Icing ~ Agrega color al Royal Icing

Hello everybody!! Today I am going to show you how I color Royal Icing ~ Hola todo el mundo!

You'll need ~ Necesitas:
Royal Icing
Food Coloring ~ Colorante Alimenticio
Water ~ Agua
Spatulas or knives ~ Espátulas (Miserables) o cuchillos
Plastic food containers, for this purpose ~ Contenedores de plástico, para este fin
Toothpicks (not pictured, sorry!)

Food Color ~ Colorante Alimenticio
I use different Food Coloring brands (Americolor, Chefmaster Wilton, KopyKake) and a mexican brand (Arcobaleno) ~ Yo uso distintas marcas de Colorantes Alimenticios (Americolor, Chefmaster Wilton, KopyKake), y una marca mexicana (Arcobaleno)...

This is because, until now, I am not able to find Americolor Gels in Cancun. So I stock up when I visit US, or order from Karen's Cookies, they send worldwide!

I label my colors with a Sharpie with the name on top... saves a lot of time!

1. Add a drop of color, or use a toothpick or the knife point if yours come in small jars. Go easy with color, a little goes a long way, and it will be more intense after a few hours ~ Agrega una gota de color, o usa un palillo o la punta de un cuchillo si viene en un botecito pequeño.

2. I add a drop of water on top of the color ~ Yo agrego una gota de agua sobre el color...

3. Continue mixing... you'll see water helps a lot for not overmixing, which will introduce air,  which turns into bubbles. We don't want bubbles in our icing!

There you have it! Nice and smooth... Be sure to cover while not in use ~ Ahí lo tienes! Lindo y suave... Asegúrate de taparlo si no lo usas...

No te asustes!!

Royal Icing
After makingrolling, cutting and baking dough we want to beautify our COOKIES.
There are different techniques for after baking decorating, one of these techniques is decorating with Royal Icing. Today I will show you how I make Royal Icing.
I believe each decorator finds the method that best works based on experience and needs. I am sure YOU have a better way, or will have one once you start playing with COOKIES!

Whisk dry ingredients together ~ Mezcla los ingredientes secos
Like many COOKIE Decorators, I started using Antonia74's recipe for Royal Icing from CakeCentral. I've never had problems with sweet food, but I found out that by adding citrus flavoring and juice, I cut the sweetness. I love the tangy flavor combined with the orangey of my COOKIE Dough. You can play and experiment with the flavors you like.
I don't follow Antonia's instructions, though. My way of mixing Royal Icing might raise some eyebrows, but it's what has worked for me.
A couple of secrets:  I don't mix the meringue powder with water, instead I mix the dry ingredients together with a whisk or fork.

Don't add more than 2/3 cup liquid ~ No agregues más de 2/3 taza de líquidos

I add less water, too. Living in a very humid weather, I like my Royal Icing firm and a bit dry.

Antonia74 Royal Icing
Mixing Royal Icing for 10 minutes adds a lot of air, and I don't like fighting air bubbles. So I mix on low speed until the ingredients are just mixed, and that's it!

Add liquids to dry ingredients ~ Añade los líquidos a los ingredientes secos
Please tell me about your Royal Icing or Glaze, about the weather where you live, I want to know :)

~

Look for a firm consistency ~ Busca una consistencia firme

Looks like Sherbet! ~ Parece Nieve o Sorbete!
