rolling, cutting and baking cookie dough!

To rock and roll means rolling, cutting and baking COOKIE Dough... and this is best done while listening to good music... your choice of course! While rock and rolling this time, I listened to Julio Iglesias, such a romantic! What you need ~ Lo que necesitas

You need:
COOKIE Dough, cold but not frozen
COOKIE Sheets
Parchment Paper, cut the size of your COOKIE Sheet
Rolling Pin
COOKIE Cutters
Cooling Racks
Optional:
Silpats
Spatula
Boo Boo Stick
Rolling Pin Rings

Necesitas:
Masa de GALLETA, fría pero no congelada
Charolas para Hornear GALLETAS
Papel para Hornear (Papel Pergamino), cortado del tamaño de tus Charolas de Hornear GALLETAS
Rodillo
Cortadores de GALLETAS
Rejillas para Enfriar
Opcional:
Silpats
Espatula
Boo Boo Stick
Aros de Goma para Rodillo


This is the way I do this, as with everything, it's not the only way to do it, but this has worked for me... I think I've conquered the weather in Cancun, and it took me time to achieve the results I wanted...  ~  Esta es la forma en que yo lo hago, como en todo, no es la única manera de hacerlo, pero es la que me ha servido a mi... Creo que he conquistado el clima de Cancún, y me tomó algo de tiempo lograr los resultados que buscaba...

Preheat oven to 350°F  ~  Calienta el horno a 180°C

Place between parchment paper ~ Pon entre hojas de papel pergamino

Take a batch of dough out of the plastic bag and place between parchment paper. Roll to desired thickness, I use the 3/8 ring... not to thick...  ~  Saca de la bolsa un tanto de masa y ponla entre hojas de papel de hornear. Extiende con el rodillo al ancho que desees, yo uso el aro de 3/8... no muy grueso...

Cut dough with COOKIE cutter as close to each other as you can... go all  the way down the dough to make sure it is perfectly cut. Place Parchment Paper on COOKIE Sheet and transfer to the refrigerator to cool...  ~  Corta la masa con el Cortador de GALLETA tan cerca unas de otras como sea posible... para estar seguro que quede bien, corta hasta el fondo.  Pon la hoja de Papel Pergamino en una Charola de GALLETAS y ponla en el refrigerador para que se enfríe...

Cool before removing excess dough ~ Enfría antes de quitar el exceso masa 

Here's a little secret: I roll dough directly on the Silpat because hot weather makes it difficult to handle and move dough... Your precious Silpats won't be damaged by COOKIE Cutters, trust me... Just remember to leave  1/2 inch between COOKIES so they don't touch when baked. ~  Aquí un secretito: Yo extiendo la masa directamente sobre el Silpat, porque el clima caliente dificulta manejar y mover la masa... Tus preciosos Silpats no van a dañarse con los Cortadores de GALLETAS, confía en mi... Solo recuerda dejar un espacio de 2 cm entre cada GALLETA para que no se toquen al hornearlas.

My little secret ~ Mi secretito
Remove excess dough. I use the spatula or the tiny spatula side of the Boo Boo Stick for  deep in the dough curvy shapes. Arrange cut forms on parchment paper or transfer to Silpat. If you cut directly on Silpats, leave as is.  ~  Quita el exceso de masa. Yo uso una espátula y el lado de la Boo Boo Stick que tiene una pequeña espátula para formas con curvas profundas en la masa. Acomoda las formas que cortaste en el papel pergamino o colócalas en el Silpat. Si cortaste directo sobre el Silpat, déjalas como están.

Remove excess dough ~  Quita el exceso de masa

I re-roll dough scraps two times only. I've found COOKIES from many times rolled dough are tough and shrink while baking... no bueno! But don't throw away that dough! Bake it for family, or some fun things I'll share in the future...  ~  Yo extiendo los sobrantes de masa solamente dos veces. Me he dado cuenta cuando la estiro muchas veces, las GALLETAS quedan duras y se encojen al hornear... no bueno! Pero no tires esa masa! Horneala para tu familia y otras cosas divertidas que compartiré en el futuro...

Place COOKIE Sheet in the middle rack and bake 10-12 minutes or until edges start to turn light golden. Rotate COOKIE Sheets halfway through baking if you are baking multiple sheets.  ~  Pon la Charola de GALLETAS en la rejilla del centro y hornea 10-12 minutos o hasta que los bordes empiecen a ponerse dorado claro. Rota las Charolas de GALLETAS a la mitad del horneado si estás horneando varias charolas a la vez. 

Bake until bottoms are light gold ~ Hornea hasta que la base este dorado claro


Let COOKIES cool on COOKIE Sheets for 1 min. before moving to racks. ~  Deja que las GALLETAS se enfríen en las charolas de GALLETAS por 1 min. antes de pasarlas a las rejillas.

Don't transfer to racks immediately! ~ No las pases a las rejillas inmediatamente!

Cool completely on racks before icing or storing in airtight containers or Ziploc bags... ~ Enfría completamente antes de decorar o guardar en recipientes herméticos o bolsas Ziploc...

These COOKIES are perfectly baked... pale COOKIES are softer, but when baked a little more, the caramelized sugar gives the COOKIE great flavor and crisp... ~  Estas GALLETAS están horneadas perfectamente... las más pálidas son suaves, pero si las horneamos un poco más, el azúcar caramelizada le da a la GALLETA muy buen sabor y son más crocantes...

wonder where i've been...

Wonder where I've been lately??? Well it's been a very busy week here at home...


I've been working on some reno on the girls's room. You know how girls love to have friends over and chat and listen to music and dance and talk about boys and Jonas Brothers, and girly stuff like lipstick and Seventeen Magazine and all that?... well, the Infantas in this house are always complaining about their room (they have a point here) and I am working on a project, learning as I go... don't know how this will end, or if we'll just all sit and cry, and maybe eat COOKIES, but I'm doing my best to beautify their room and be the BEST MOM EVER!


I've also been hanging out with much neglected friends cause I don't want to be left friendless in this world lol... I had breakfast with friends I made at my children daycare, in 1994, and today I have a birthday party with ALL my BFF's in Cancun that was postponed in November because the party girl was in Arizona waiting for her grandson's birth! I wonder is we should celebrate her next b-day, too...


I'm almost done with the next step of our COOKIE tuto, so hang in there for me a couple of days and you'll know all my rock and rolling secrets!...

Se preguntan en dónde he estado últimamente??? Ha sido una semana un tanto ajetreada aquí en casa...


He estado trabajando en unas renovaciones en la recámara de las niñas. Ustedes saben como a las niñas les gusta tener amigas y platicar y escuchar música y bailar y hablar sobre niños y los Jonas Brothers, y cosas de mujeres como lipstick y revistas y todo eso?... bueno, pues las Infantas de esta casa siempre se quejan de su recámara (y tienen razón), y estoy trabajando en un proyecto, aprendo al tiempo que lo ejecuto... no sé cómo va a terminar o si vamos a sentarnos a llorar, y tal vez a comer GALLETAS, pero estoy haciendo lo mejor que puedo para embellecer su cuarto y ser la MEJOR MAMA DEL MUNDO!


Tambien he salido un poco con amigas que tenía abandonadas porque no quiero quedarme sin amigos en este mundo jeje... Fui a desayunar con mis amigas del mini-kinder de mis hijos, en 1994, y hoy tengo una fiesta de cumpleaños con TODAS mis amigas super consentidas de Cancun, que se pospuso en Noviembre porque la festejada se había ido a Arizona a esperar el nacimiento de su nieto! Me pregunto si tal vez debemos celebrar su próximo cumple, tambien...


Casi está listo el siguiente paso de nuestro tuto de GALLETAS, así que aguanten unos días más y van a conocer todos mis secretos!...

This is my 100th Post!!

I started this blog back in 2009 as a way of showing my work to clients and COOKIE friends from around the world...

I knew blogging was fun, but I never thought it would be such a wonderful experience. Through my blog I've met beautiful people, from different countries with whom I share my love for COOKIES... many have become friends and we care about each other. I've met some of them in person in Mexico City, and the United States.

I don't think I was the first person living in Cancun who started icing sugar COOKIES, but I'm sure no one here was teaching how to do it. So I bought a couple of books, and searched the internet looking for decorators... I found Foro FM (Mexico) and Cake Central. One day on CC someone mentioned two blogs that changed my life.

These first blogs were Bridget's Bake at 350 and Laura's A Dozen Eggs. At first I didn't leave comments, but I couldn't resist and I became their follower! Now I read and follow many other blogs!

I found Bea Roque, El Rincón de Bea a friend who I consider my "almost twin" from Spain (we share the same name, year and month of birth, I'm older than her for only 3 days!), and Pam (CookieCrazie) whose work is for a Mission in the Ukraine.

What I like about blogs, is that the person who writes talks from his/her own experience, and puts a lot of time and love to share what he/she knows, or has to say about something. As my friend Sugarbelle tells me, this is about being yourself.

I acknowledge that effort by leaving a comment. I know it feels good when someone says something about your work, or just stops to say Hi!

I've joined FlickrFacebook and Twitter... In this vast community I have many friends and I'm having the time of my life! I love to learn, share and have fun with the people I meet!

Este es mi Post 100!!

Cuando inicié este blog, en 2009, lo hice como una forma de mostrar mi trabajo a clientes y amigas GALLETERAS alrededor del mundo...

Sabía que tener un blog era divertido, pero jamás me imaginé que sería una experiencia tan maravillosa. A través de mi blog he conocido gente bellisima, algunos de distintos paises, con quienes comparto mi amor por las GALLETAS... muchos se han convertido en amigos y nos interesamos unos por otros. He conocido en persona a algunos de ellos, en la Ciudad de México y en los Estados Unidos.

No creo haber sido la primera persona en Cancún que empezó a decorar GALLETAS, pero estoy segura que nadie aquí enseñaba cómo hacerlo. Así que compré un par de libros y busqué en el internet decoradores de GALLETAS... y encontré Foro FM (Mexico) y Cake Central. Un día en CC alguien mencionó dos blogs que cambiaron mi vida.

Estos primeros blogs son el de Bridget Bake at 350 y el de Laura A Dozen Eggs. Al principio no dejaba comentarios, pero no pude resistirme y me convertí en su seguidora! Ahora leo y sigo muchos blogs! 

Encontré a Bea Roque, de El Rincón de Bea a quien considero mi "casi gemela" en España (nacimos el mismo año, el mismo mes y solo soy mayor que ella por tres días!), y a Pam (CookieCrazie) cuyo trabajo es para una misión en Ucrania.

Lo que me gusta de los blogs, es que quien lo escribe habla de su propia experiencia, y pone mucho tiempo y amor para compartir lo que sabe o tiene que decir acerca algo. Como dice mi amiga Sugarbelle se trata de ser tu mismo.

Yo agradezco ese esfuerzo dejando un comentario. Sé que se siente bien cuando alguien dice algo acerca de tu trabajo, o simplemente te deja un Hola!

my cookie dough list

My COOKIE Dough List:

  1. Use fresh, good quality ingredients
  2. Measure ingredients well
  3. Beat on low speed using the paddle attachment of your mixer
  4. Beat butter and sugar until light and fluffy
  5. Be creative and use different flavors that combine with the flavor of Royal Icing (RI)
  6. Do NOT over mix flour
  7. Cover your mixer when adding dry ingredients helps keep the kitchen (and you) clean
  8. Save time: Make ahead COOKIE Dough and freeze for future use
  9. Store in plastic bag to prevent freeze burn
  10. Roll dough into a rectangle before storing
  11. Move dough from freezer to the refrigerator the night before you are going to use it
  12. Eating raw COOKIE Dough is a guilty pleasure which I do NOT recommend

Mi Lista de Masa de GALLETAS:
  1. Utilizar ingredientes frescos, de buena calidad
  2. Medir bien los ingredientes
  3. Batir a velocidad baja con el aditamento plano de la batidora
  4. Batir la mantequilla con azúcar hasta que esté clara y esponjada
  5. Ser creativa y usa distintos sabores que combinen con el sabor de la Glasa (RI)
  6. No mezclar la harina de mas
  7. Cubrir la batidora cuando agregas los ingredientes secos ayuda a que tu cocina (y tu) se mantengan limpios
  8. Ahorrar tiempo: Preparar Masa de GALLETAS con anticipación para usarla en el futuro
  9. Guárdar la masa en bolsa de plástico para evitar que se queme en el congelador
  10. Estirar la masa en un rectángulo antes de guardarla
  11. Cambiar la masa del congelador al refrigerador la noche antes de usarla
  12. Comer Masa de GALLETAS cruda es un placer inconfesable que NO recomiendo

cookie dough... i love you!

Seven Ingredients that make me happy!   ~   Siete ingredientes que me hacen feliz!

After trying different COOKIE Dough recipes, adding, changing, testing... I ended up with one that my family, friends and I like a lot. I've tested COOKIES from friends that use recipes completely different so  I think no recipe is better than other, but that everyone has a personal taste and like. Some like crunchy or soft, buttery, spicey... the best recipe is the one that best works for you, the one you love working with, and tastes and feels the way you like...

I like the No Fail Sugar COOKIE, from Cake Central a lot, it is one of the recipes that lead to mine... so let's begin with that one, I'll tell you some of the changes I made...

I use powdered sugar instead of sugar because, living in Cancun (hot summer weather all year long), I have to cream butter and sugar for a VERY short time or I end up with soupy sugared butter.

As much as I love vanilla, I prefer citrus flavored COOKIES, so I use oil based orange extract for COOKIES, and non oil for Royal Icing (RI). That cuts the sweet from the COOKIE and people seem to love that.

This is important, use a clean cloth to cover your mixer when adding dry ingredients, or you and your kitchen will end up covered with it!

So let's start with COOKIE Decorating by preparing our COOKIE Dough. This is the way I do it, I'd love to hear if you tried it or how you do it!

One more thing before we begin... I ALWAYS, ALWAYS prepare at least 6 batches of COOKIE Dough... Why so? Because it takes the same time to wash all the utensils if I make one batch or six. Why 6 batches? Well, sometimes I make 12, if I have a lot to bake... And I like number 6, it's like half a dozen or three times two, or... but you can make one, three, or as many batches as you wish!

No Fail Sugar COOKIES


Easy peasy! Now please make some dough because next we'll I rock and roll... no, we´ll roll, cut and bake COOKIE Dough!


Always use fresh eggs   ~   Usa siempre huevos frescos

Creamed and fluffy...   ~   Acremada y esponjadita...


Después de probar diferentes recetas de Masa de GALLETAS, de agregar, cambiar, probar... terminé con una que nos gusta a mi familia, amigos y a mi. He probado GALLETAS de amigas que usan recetas completamente distintas a la mía y me atrevo a decirles que no hay una receta que sea mejor que otra, sino que cada quien tiene sus propios gustos: suave o crujiente, con más o menos mantequilla, especias... la mejor receta es la que mejor te sirve a ti, con la que tu mejor trabajas, y la que mejor te sabe y sientes... 

Me gusta mucho la No Fail Sugar COOKIE de Cake Central y es una de las recetas que usé para llegar a la mía... así que empecemos con esa, les cuento algunos cambios que le hice...

Uso azúcar glass en lugar de azúcar porque viviendo en Cancun, y con un clima que es caliente y veraniego todo el año,  necesito acremar mantequilla con azúcar en muy poco tiempo si no quiero terminar con una sopa de mantequilla azucarada.

Me gusta mucho el extracto de Vainilla, pero para mis GALLETAS uso extracto oleoso de Naranja porque me  gusta el sabor cítrico y me parece que le baja un poco lo dulce a la GALLETA, para la Glasa (RI) uso uno que no es oleoso. Creo que a la gente le encanta!


Esto es importante, cubre tu batidora con una toalla limpia cuando agregues los ingredientes secos, así ni tu cocina ni tu terminan como ratón de panadería...

Así que empecemos con la Decoración de GALLETAS preparando nuestra Masa de GALLETAS. Yo la hago de la siguiente manera... Por favor pláticame si la hiciste o como la haces tú!

Una última cosa antes de comenzar... yo SIEMPRE, SIEMPRE  preparo al menos 6 tandas de Masa de GALLETAS... Por qué? Porque me lleva el mismo tiempo lavar todos los utensilios que uso para preparar una tanda, que para preparar 6. Por qué 6? Si tengo mucho que hornear preparo 12... pero me gusta el número 6, es media docena, tres veces dos o... en fin, pero tu puedes preparar una, tres, o las que quieras!
Do NOT over mix after adding flour   ~   No mezcles de más despues de agregar harina

As I approach the 365 day count packed in 2011, I started to think about what I have to give thanks for. I ended with a loooong list, and cut it in half, then thought about 25, and finally came to 10. I have lots of things to give thanks for this year, but these, for me are the Top 10... what are yours? Please share...


  • I am a child of God, I believe Jesus saved me and I have a close relationship with Him. This year I resumed my Bible study, opened our house for a Bible study group, and am reading my  Bible on a regular basis.
  • 2011 presented many challenges, and I lived through them with God's help, and my family and friends' support... 
  • My husband and I celebrated our 20th Anniversary on July... and I still feel butterflies in my stomach when I think about him!
  • Our children are growing up hearing God's word and his promises. They are affectionate, kind, fun, good students (that meaning they attend school, not their grades), independent,  helpful, considerate...
  • My Mom recovered from her accident, is eating well and is taking her medicines. She's still living with us, but is more independent and will move soon
  • I learned how to live on a budget... and survived!
  • For the first time, we are involved in housekeeping and chores concerning our home... we are doing it as a family, it's been easier than I thought it would be, we are all learning in the process and are saving a lot of money...
  • I met more COOKIE friends and had a great time playing COOKIE with them! I am blessed to be part of a wonderful group of friends, COOKIE Queens.
  • I've had the opportunity to share and learn about what I love through this blog, and have fun with hundreds of people on twitterfacebook and flickr!
  • I took an amazing photo workshop, L'Atelier by Jackie Rueda. Thanks to Jackie, I'm looking at the world with new eyes!

Nos acercamos al final de los 365 días que venían empacados en este 2011, y empecé a pensar en las cosas por las que estoy agradecida. Terminé con una laaaarga lista, la corté a la mitad, pensé en 25 y finalmente llegué a las 10. Hay muchas cosas por las que doy gracias este año, pero estas son el Top 10... cuáles son las tuyas? Compártelas conmigo...

  • Soy hija de Dios, creo que fuí salvada por Jesús y vivo una relación estrecha con El. Este año retome mi estudio Biblico, abrí nuestra casa a un grupo de estudio bíblico, y leo mi Biblia regularmente.
  • 2011 planteó muchos retos, y los viví con ayuda de Dios, y el sostén de mi familia y amigos...
  • Mi esposo y yo celebramos 20 años de casados en Julio... y todavía siento mariposas en el estómago cuando pienso en el!
  • Nuestros hijos están creciendo escuchando la palabra de Dios y sus promesas. Son cariñosos, amables, divertidos, buenos estudiantes ( me refiero a que van a la escuela, no a sus calificaciones), independientes, atentos, considerados..
  • Mi Mamá se recobró de un accidente, está comiendo mejor y tomando sus medicinas. Todavía vive con nosotros, pero cada días es más independiente y va a mudarse pronto
  • Aprendí a vivir con un presupuesto... y sobreviví!
  • Por primera vez nos involucramos en las tareas de la casa y su mantenimiento... lo estamos haciendo en familia, y ha sido más fácil de lo que pensé, estamos aprendiendo mucho en el proceso y ahorrando mucho dinero...
  • Me reuní con más amigas GALLETERAS y nos divertimos mucho GALLETEANDO juntas! Me siento bendecida de ser parte de un maravilloso grupo, COOKIE Queens.
  • He tenido la oportunidad de compartir y aprender a través de este blog, y me he divertido mucho con cientos de personas en twitterfacebook y flickr!
  • Tomé un taller de fotografía maravilloso, L'Atelier by Jackie Rueda. Gracias a Jackie, estoy mirando al mundo con nuevos ojos!

keep the doctor away...



A few years ago, I started looking for Quotes on COOKIES... I shared them with friends on FB and twitter... Incredible as you may think, I couldn't find as many as I wanted, so I started to write my own. I use the word COOKIE on a quote, and change any other word for it make sense... at least to me :D

I have lots to share, but if you come up with one, I'd love to publish it on my weekly COOKIEQuotes post and give you credit!

Hace unos cuantos años empecé a buscar citas sobre GALLETAS... las compartí con amigos en FB y twitter... por increible que parezca, no pude encontrar tantas como quería, así que empecé a escribirlas yo misma. Uso la palabra COOKIE en una cita, y cambio cualquier otra palabra para que tenga sentido... por lo menos para mi :D

Today, my dear friend and fantastic COOKIE decorator Maryann Rollins (Cookie Artisan), will represent our Flickr group, COOKIE Queens, on the Martha Stewart Show, airing on Hallmark Channel at 9AM Central. Maryann iced some COOKIES with Martha!!!


Four other members, Laura (adozeneggs)Callye (Sweet Sugar Belle),  Glory (Glorious Treats), and Marlyn (Montreal Confections), joined the show via Google Hangout.


I'm so proud to be among a group of talented COOKIE artists, that above all, are beautiful human beings.

Esta semana es COOKIE Week y tengo una gran noticia que compartir con ustedes!


Hoy, mi querida amiga y fantástica decoradora de GALLETAS Maryann Rollins (Cookie Artisan), va a representar a nuestro grupo de Flickr, COOKIE Queens, en el Show de Martha Stewart, al aire por Hallmark Channel a las 9am Central. Maryann decoró GALLETAS con Martha!!! vintage birdcages, flowers and birds


Last week I worked on these COOKIES... the minute I opened the file my client sent, I fell in love with it!!! What's not to love about them? The colors are soft, but with a lovely lime green... the birds are cute and chubby... the flowers, kind of doodled, and I doodle all the time... my client loved these birdcages, and asked if I could add tiny flowers... I say YES!!! I love to work with designs like these!!!

La semana pasada hice estas GALLETAS... en el instante en que abrí el archivo que me envió mi clienta, caí rendida de amor!! Y es que, quién no ama estos diseños? Colores suaves, pero con un toque de verde vivo... los pajaritos, gorditos y super tiernos... las flores, como dibujitos, y a mi me encanta dibujar... mi cliente me preguntó si podía ponerle florecitas a estas jaulitas... SI, claro que puedo!!!! Me encanta trabajar con diseños asi!

jungle animal cookies


I'm happy I found a lost Memory Stick today!!! Have you ever lost one? This one was lost for more than a year!!! It was hidden in a little bag where I store my Sony Camera manual...

I found some pics from Regina's B-day, a lot I took of a Dessert Table and Candy Box and some COOKIES!!!
I liked these a lot because they are more realistic than my Noah's Arc COOKIES ... I love them both! Which one do you like more?

Hoy encontré la Memory Stick de una cámara que perdí hace mas de un año!!! Estoy feliz!! Alguna vez se te ha perdido una? Te pones a pensar en toooodas las fotos que pueden estar ahi, y sufres. Estaba escondidita en una bolsita donde guardo el manual de mi cámara Sony...
Me encontré fotos del cumple de Regina, muchas que tomé de una Mesa de Postres y una Caja de Dulces y tambien de GALLETAS!!!
Me gustan mucho estas porque los colores son mas reales que los de mis GALLETAS del Arca de Noé... me gustan mucho las dos!!! A ti cuál te gusta mas?

birthday sweets and flowers...


I made these COOKIES for our former Governor's wife Birthday Party... I loved the theme "sweets and flowers" and the colours the hostess chose...


Hice estas GALLETAS para la fiesta de cumpleaños de la esposa de quien fuera nuestro Gobernador... me encantó el tema "dulces y flores" así como los colores que eligió la anfitriona...
